Hello 100 degree weather. Welcome back.
Every year I think it will get easier, and then the 100+ degree weather hits and it makes me want to crawl into any building that has air conditioning or seek out the nearest pool. I get surprised every year at how hot it really feels and yet, I still love living here.
Do you ever feel like you don’t have enough time to meal prep or are too hungry when you get home from work to cook up a meal? Me too! Lately, I have been loving big whole wheat pasta dishes. They are simple to make, are quick, and you can keep mixing up the dishes with different sauces and/or veggies!
With some job changes and a little break from blogging to settle into our new lives, we’re back and ready to show ya’ll some love. Valentine’s Day is tomorrow and you gals may be asking yourselves some questions: what outfit should I pull together from my closet and/or what desserts or drinks should I be enjoying? We kept it extra simple this year and I put together two outfits that make me feel comfortable and gorgeous, and treats that honestly make me feel the same.
In our last post, which you can read here, we introduced two concerns we’ve heard from many friends, acquaintances, and coworkers that ultimately keep them from enjoying a healthy-eating, home-cooking lifestyle:
1. “It just takes too long to cook at home…” or “I simply don’t have the time to cook…”
2. “It just costs way too much to eat healthy and cook healthy…”
We gave it our best to debunk the first point in our last post, and want to share with you today how eating healthy and cooking healthy doesn’t really have to break your bank or steal all those fresh and crisp dollar bills from your wallet.
Mother Nature breeds some wonderful and interesting plants, animals, and more. There are specific moments in nature when things like math and equations work out perfectly and beautifully. We had a high school art teacher who dedicated a lesson to naturally occurring fractals. The lesson forced us to develop a strong understanding of fractals in nature and had to portray that visually via our favorite medium to work with (acrylic, watercolor, etc.). Thus, our heads and hands were dedicated for 2-3 weeks to portraying a fractal in nature that we personally believed was fascinating and unique. This was a class project that stayed with us for years.
Allison and I have a big question…
Who comes up with the National holidays?? Like National Pancake Day (which of course we approve), National Puppy Day (give us puppy hugs all day), or National Organize Your Home Day (for realz is a thing, so for all you who didn’t organize your home on Jan 14th, ya’ll missed your opportunity…guess we’ll just have to wait till next year… Darn.).
Truly though, an entertaining time killer is googling the strangest National Days. Give it a whirl when you’re waiting for your dinner to cook, need a break from your homework or simply can’t fall asleep at night.
We did however, celebrate in National Margarita day that fell on Monday, Feb 22nd. We headed to a Miami-beachy-bright-palm treey restaurant in Downtown Scottsdale and what we didn’t realize before parking was they were also having Taco Monday which meant delicious tacos for just 2 BUCKS! Woooot Woot. Best surprise for us when we scanned our menus.
Through our sister chats, our tortilla chip and salsa dipping and margarita sipping, we had some fine tacos. Allison ordered a grilled shrimp taco and a roasted plantain taco. I ordered a crispy cod taco and a green chili chicken taco. Each were quite exceptional and as we swapped to taste each others we eyeballed each other and asked, “Dude, why don’t we make more tacos?!”
And so we did.

There aren’t many words that can either sound confusing, stressful, and delicious as the word “snack.” You know what we mean?
Do you ever find yourself a couple hours after you have JUST eaten your breakfast feeling hungry? And you’re left truly confused as to how?! Like, how did that massive egg sandwich with that hummus spread, spinach, onions and bell peppers loaded between two pieces of perfectly toasted whole wheat bread not cut it? Or that hearty bowl of oatmeal topped with bananas, raisins, cinnamon, honey, and almond milk not fill up the belly till the lunch hour? Especially when most of the time those breakfasts do keep you afloat until lunch! Confused. What’s goin’ on body!? And then comes the stress…
Some of our favorite things to eat are recipes and dishes that are loaded up with color. And by color we mean natural color, not color like a large bowl of Fruit Loops or Trix cereal (which we loved as kiddos! And remember it fondly by that sugar scratchy feeling that would always linger at the tops of our mouths).
We’re talkin’ rich deep reds in foods like tomatoes and kidney beans.
Bright yellows like in corn and other yellow vegetables like acorn squash.
Greens bright like summer grass found in limes and cilantro and jalapeno peppers.
Hot pinks and bold purples found in root vegetables like radishes and beets.
Running out of time?
Don’t feel like spending hours in the kitchen cooking?
If so. We totally feel you.
This week we are making a quinoa pasta broccoli dinner that is just Too Easy and So Good! Ash and I have been busy with work/school. I’m just getting into the groove of school starting back up again… said a tearful goodbye to my winter break… We’re also trying to squeeze in our daily workouts and hangouts with friends — especially as a close and hilarious buddy of ours from California moved right into our apartment complex this past weekend!!!! AKA a new fav pal = the best excuse for more adventures and movie nights.
Smoothies are incredibly lovable. Are we all on the smoothie train here? If not, hop on, friends. It’s a delicious and healthy ride.
We’re minutes away from settling into the middle of January as 2016 really hit the ground running. With the hustle and bustle of getting back into our routines and contemplating our New Year, New Me plans, Allison and I have LOVED having the opportunity to quickly toss in fresh fruits and veggies into a blender to refresh ourselves before bouncing off to our next errand or a New Me task.
Our go-to smoothies always have a green (spinach or kale) and a banana. The additional add-ins become the fun part as our pantry/fridge ingredients of the week help us to mix up or smoothie recipes.
