Strawberry Yogurt Popsicles

Hello 100 degree weather. Welcome back.

Every year I think it will get easier, and then the 100+ degree weather hits and it makes me want to crawl into any building that has air conditioning or seek out the nearest pool. I get surprised every year at how hot it really feels and yet, I still love living here.

Arizona is a such a beautiful state and Ash and I wanted to celebrate the AZ summer by creating a cold, sweet, but healthy treat to enjoy in the heat. When it gets this hot, the best cure is to sit poolside with a cold snack, and what’s an easy treat to carry to the pool with you (besides mixed drinks, obvi)??? A popsicle!

Ash and I made a yogurt and fruit based popsicle to help curb a sweet craving and to help with that typical AZ summer dry mouth. We wanted to keep this recipe easy and sweat free, so these popsicles only have FIVE ingredients: Greek yogurt, strawberries, strawberry jam, honey, and vanilla extract! Easy!!

8-10 strawberries
1 tbsp strawberry jam
1/2 cup of Greek yogurt, plain
1 tbsp honey
1 tsp vanilla extract
Popsicle molds


Wash and chop the strawberries to the desired size that you want (we suggest bite-sized) and place them in a bowl. Add the jam to the strawberries and toss to coat them. In another bowl, mix the Greek yogurt with honey and vanilla extract.

Next, place a small spoonful of the yogurt mixture in the bottom of the popsicle mold and layer with the strawberry and jam mix. Repeat until the mold has been filled 3/4 full. Add in the sticks and freeze for a about 3 hours or leave them to freeze overnight if you can plan ahead!

Once the popsicles are ready, grab your friends, put on your swimsuit, get the beach ball, and go cool the F down!!!! That Phoenix heat is here to stay, so to all you lovely Arizonians out there, GOOD LUCK! <3
